Mail apps
Every mail app works. Most need only your address.
Your account password goes into no mail app. Every device gets an app password of its own, revoked on its own, for instance when a phone is lost.
The settings

By device
iPhone, iPad and Mac
Tap "Apple profile" in the settings. The profile sets up Mail, with an app password of its own.
Outlook
Type your address; Outlook finds the settings through your domain's autodiscover.
Thunderbird
Type your address; Thunderbird reads your domain's autoconfig and fills in everything.
Android
Add an IMAP account with the settings above in Gmail or another mail app, or install the web client.
Shared mailboxes
Appear in the mail app under "Shared", with the same rights as in the browser.
The web client as an app
On the phone via Share, "Add to Home Screen", with notifications for new mail.
